This is reportedly the dish Mozambicans are most likely to be served in someone's home — and least likely to ever see on a restaurant menu.

Ground peanuts are mixed with water into a creamy base, then simmered with chicken or fish, tomato, onion, and grated coconut until thick and velvety. Inhambane cooks lean harder on grated coconut than neighboring provinces, giving the dish a sweeter, richer finish, served over xima.

Why it's made this way: Peanuts and coconut are both major Inhambane crops, and this curry — one of Mozambique's most everyday home-cooked dishes — is the province's signature way of combining them.
