Inhambane is Mozambique's coconut country, its coast lined with vast palm groves, which is why coconut finds its way into so many of the province's everyday pots.

Ground peanuts are mixed with water into a creamy base, then simmered with chicken or fish, tomato, onion, and grated coconut or coconut milk until thick and velvety, served over xima or rice.

Why it's made this way: Peanuts and coconut are both major Inhambane crops, and this curry — one of Mozambique's most everyday home-cooked dishes — is the province's signature way of combining them.
