Inhambane Bay and the nearby Bazaruto Archipelago are specifically renowned for lobster, a step up from the everyday LM Prawns found further south and usually priced for a special occasion rather than a daily snack.

Whole lobster is split, brushed with garlic butter or piri-piri, and grilled over charcoal at beachside stalls and family-run eateries around Inhambane Bay. It's served simply, often with little more than lemon and bread to mop up the juices.

Why it's made this way: The warm, reef-sheltered waters of Inhambane Bay and the Bazaruto Archipelago produce some of Mozambique's most prized lobster, turning the coastline into a destination for seafood beyond the everyday prawn and fish stalls.
