Cashews account for roughly a fifth of household income across Nampula province — the nut sold roadside is also the backbone of the local economy.
Raw cashews are roasted over coals or in a dry pan until their shells crack, then shelled and lightly salted. Vendors along Nampula's roads and market stalls sell small paper twists of them as an easy snack for travelers and shoppers.
Why it's made this way: Nampula is Mozambique's cashew heartland, planted with the trees under Portuguese colonial policy in the 20th century, and the province still produces the bulk of the country's crop today.
