Vendors roast the corn cob still in its husk over open coals, then peel it back on the spot — the char comes from the husk smoking, not the kernels burning.

Corn cobs are grilled whole over charcoal braziers until lightly charred, then sold hot off the coals, sometimes rubbed with salt or a squeeze of lime. It's one of the most common quick bites at Nampula's Mercado Central and roadside stops.

Why it's made this way: Maize is Mozambique's staple grain, and roasting the cob straight off the plant turns the harvest into instant street food, sold by vendors along the roads leading into Nampula city.
