The roasting cobs are usually mature, starchy field maize, the same crop ground for xima, so they're chewier and far less sweet than the sweet corn eaten in Europe or North America.

Corn cobs are grilled whole over charcoal braziers until lightly charred, then sold hot off the coals, sometimes rubbed with salt or a squeeze of lime. It's one of the most common quick bites at Nampula's Mercado Central and roadside stops.

Why it's made this way: Maize is Mozambique's staple grain, and roasting the cob straight off the plant turns the harvest into instant street food, sold by vendors along the roads leading into Nampula city.
