Nampula province's coastline runs past Nacala, one of the deepest natural harbors in the world — a big reason its markets are stacked with fish, prawns, and squid every morning.
A whole fish is grilled over charcoal, then finished with a sauce of grated coconut, garlic, and chili simmered down until thick. Coastal stalls near Nampula's Mercado Central serve it with rice or xima.
Why it's made this way: Nampula's long Indian Ocean coastline and dense coconut palm groves make coconut-sauced seafood the everyday cooking style here, distinct from the drier grills further south.
