The stretch of the Zambezi running past Tete is dammed just upstream at Cahora Bassa, one of Africa's largest reservoirs — so the same river supplies both the region's fish and much of southern Africa's electricity.

Bream, tilapia, and other river fish pulled daily from the Zambezi are grilled whole over charcoal at riverside stalls and market grills in Tete, seasoned simply with salt, garlic, and lemon. It's usually eaten with xima or rice.

Why it's made this way: Tete's food culture runs along the Zambezi River, and fresh river fish — grilled, steamed, or stewed — is the daily counterpart to the province's famous goat meat.
