The bananas are simmered whole rather than mashed, so they hold their shape while slowly softening into the sweet coconut broth around them.

Whole small bananas are gently simmered in coconut milk and palm sugar until soft, sometimes with a little rice flour added to thicken the liquid into a light pudding. Rakhine dessert stalls serve it warm in small bowls, especially popular in the cooler months.

Why it's made this way: Rakhine State's own version of the coconut-and-banana dessert found across Lower Myanmar's coastal regions reflects the local abundance of both coconut palms and bananas along its riverbanks.
