Blue cod fillets are battered or crumbed and fried until golden, prized for firm white flesh that breaks into clean flakes rather than falling apart. Kaikōura's seafood shacks sell it alongside crayfish and pāua as the more affordable catch-of-the-day option.

Why it's made this way: Blue cod is most abundant in the colder waters around the South Island, making it the default fish-and-chip order in towns like Kaikōura where it's landed daily rather than trucked in from further north.
