Lonely Planet once ranked a blue-and-white caravan parked on the Kaikōura roadside 7th out of 500 in a worldwide list of the planet's best eating experiences.
Whole crayfish — a large spiny rock lobster known in Māori as kōura — are boiled or grilled and served simply with bread and lemon, sold straight out of roadside caravans overlooking the Pacific. Nin's Bin, running since 1977, is the most famous of the blue-and-white seafood caravans lining State Highway 1 north of town.
Why it's made this way: Kaikōura's coastline sits above unusually deep, cold, nutrient-rich water where crayfish thrive, and family-run roadside caravans have sold the local catch straight off the boat here for decades rather than through restaurants.
