León's old colonial center has entire blocks of sweet shops, some run by the same families for generations, that sell little else but cajetas.

Grated coconut is slow-cooked with sugar and milk until it sets into a dense, chewy fudge, then cut into small squares or pressed into paper cups. Street vendors known as dulceras sell them by the piece around León's plazas.

Why it's made this way: León is Nicaragua's acknowledged capital of traditional sweets, a reputation built by generations of confectioners working from colonial-era recipes in the city's historic center.
