Nagarote and La Paz Centro both claim to be its birthplace, and quesillo stands line the highway through both towns.

A warm corn tortilla is wrapped around a thick strip of soft, salty string cheese, then topped with pickled onions and sour cream and tied into a small plastic bag — the classic way it's sold roadside.

Why it's made this way: It is tied to the towns of Nagarote and La Paz Centro on the old road between Managua and León, where vendors sold it to passing travellers as a quick, portable snack, cementing its status as a road-trip staple.
