Viejitas

Their name means 'little old ladies' — a nod to the cookie's wrinkled, cracked surface once it comes out of the clay oven.

Made from the same corn-and-cheese dough as rosquillas but shaped into flat rounds, viejitas bake up drier and crumblier. They are sold alongside rosquillas in the same paper bags at Somoto's roadside ovens.

Why it's made this way: Viejitas exist as a byproduct of Madriz's rosquilla ovens, baked from the same regional dough tradition and almost never sold outside Somoto's baking families.
