Poé is eaten with a spoon, not sipped — despite being sold from the same drink carts as tiste and cacao, it is thick enough to stand a spoon in.
Ground fresh corn is cooked down with milk, sugar, and cinnamon into a thick, custard-like pudding drink. It is spooned into cups from big pots by vendors at Masaya's Sunday market alongside other corn-based drinks.
Why it's made this way: The drink belongs to the same corn-based repertoire that has made Masaya's market vendors the country's reference point for traditional corn preparations.
