Vendors often grill the corn without husking it fully, using the pulled-back husk as a handle so customers can eat it standing at the cart.

Whole corn cobs are grilled over charcoal until lightly charred, then rubbed with butter and crumbled cuajada cheese. Street carts set up outside Matagalpa's agricultural fairs and markets sell them hot off the grill.

Why it's made this way: The snack draws directly on Matagalpa's identity as a farming and dairy region, pairing its own corn harvest with the crumbly cheese its highland dairies are known for.
