The fish is fried whole, scored to the bone on both sides, so the flesh cooks through in the same time it takes the skin to blister and crisp.

A whole red snapper or corvina is scored, seasoned, and deep-fried until the skin crackles, then served with fried green plantain chips and a squeeze of lime. Beachfront stalls in San Juan del Sur sell it fresh off the day's catch.

Why it's made this way: Rivas department's Pacific coastline and its fishing town of San Juan del Sur make fresh whole-fried fish the region's obvious specialty, distinct from the pork-and-corn cooking of the inland departments.
