It's one of the only well-known Nigerian soups made without any palm oil at all, relying purely on its spice blend for color and flavor instead of the deep red or orange most soups have.

Afia efere, meaning 'white soup,' is a pale, palm-oil-free broth made by simmering goat meat or chicken with uyayak spice, calabash nutmeg, uziza leaves, and crayfish until light and fragrant. It's often served to new mothers and convalescents as a gentle, easily digestible meal.

Why it's made this way: Its lack of palm oil sets it apart from almost every other Nigerian soup, making it valued in Efik and Ibibio households as a lighter dish for those recovering from illness or childbirth.
