The sauce's distinctive yellow color and slightly bitter edge come from potash (kaun), a natural alkaline salt that also helps soften the tough cow-foot cartilage as it cooks.

Nkwobi is chunks of tender cow foot simmered until soft, then tossed in a thick, spicy sauce of palm oil, potash, ground calabash nutmeg, and utazi leaves, traditionally served in a wooden bowl. It's a fixture of Igbo bars and joints, eaten by hand and shared over drinks.

Why it's made this way: The dish reflects an Igbo culinary tradition of using every part of the animal, turning a tough cut like cow foot into a rich, prized delicacy for social gatherings.
