Bambara groundnut, the pulse okpa is made from, grows underground like peanuts but is a completely different, more drought-tolerant legume rarely used outside a handful of West African dishes.

Okpa is a dense, savory pudding steamed from ground bambara groundnut flour mixed with palm oil, pepper, and spices, wrapped tightly in leaves or foil. Vendors around Enugu and Nsukka steam it in large pots each morning and sell it hot.

Why it's made this way: Enugu State is considered the dish's heartland, and okpa sellers along its roadsides are so iconic that the pudding has become shorthand for the city's food identity.
