The long cooking time — often three hours or more — has made ukwa a byword in Igbo households for patience, since rushing the boil leaves the seeds unpleasantly hard.

Ukwa is made from African breadfruit seeds, boiled for hours until tender, then simmered into a hearty porridge with palm oil, pepper, and often smoked fish. Sold hot by roadside vendors in Enugu and across Igboland, it's a filling alternative to rice-based street meals.

Why it's made this way: Because the seeds require hours of boiling to soften, ukwa has traditionally been a weekend or special-occasion dish, associated with unhurried, communal Igbo meals.
