Cooks often add a pinch of potash to the pot to soften the stubborn seeds faster, and some stir in fresh corn to make ukwa na oka.

Ukwa is made from African breadfruit seeds, boiled for hours until tender, then simmered into a hearty porridge with palm oil, pepper, and often smoked fish. Sold hot by roadside vendors in Enugu and across Igboland, it's a filling alternative to rice-based street meals.

Why it's made this way: Because the seeds require hours of boiling to soften, ukwa has traditionally been a weekend or special-occasion dish, associated with unhurried, communal Igbo meals.
