Unlike suya's thin skewered strips, balangu is grilled in thick slabs and only sliced after cooking, giving it a juicier, steak-like bite.

Balangu is chunks of beef or mutton marinated in oil and spices, then grilled slowly over an open fire until charred outside and tender within, typically without suya's peanut-based yaji coating. Vendors slice it to order and serve it with sliced onion, tomato, and cabbage.

Why it's made this way: As a close cousin of suya using thicker cuts and a different marinade, balangu shows the range of grilling styles within Hausa street-meat culture beyond the more famous skewered version.
