The tangy flavor comes from the milk being deliberately left to ferment naturally, not from any added yogurt culture — a preservation method herding communities relied on long before refrigeration.

Fura da nono pairs small balls of spiced, cooked millet dough (fura) crumbled into a cup of fermented cow's milk (nono), sold cold from calabash bowls. Fulani women carry it through markets and streets, and it's eaten with a spoon like a thick smoothie.

Why it's made this way: The drink comes directly from Fulani pastoralist tradition, combining the two staples of their herding lifestyle: millet farming and dairy from their cattle.
