Vendors typically singe the goat skin directly over open coals before chopping it, which is what gives asun its telltale charred aroma even before the pepper sauce is added.

Asun is bite-sized goat meat chunks, char-grilled or smoked over open flame, then tossed in a fiery blend of scotch bonnet, bell peppers, onions, and spices. It's sold hot off small charcoal grills at Lagos night markets and beer parlors, scooped straight onto foil.

Why it's made this way: Its intense pepper coating makes it a favorite bar snack across Lagos nightlife, built to be shared over drinks rather than eaten as a full meal.
