It was traditionally steamed inside leaves from the uma plant rather than foil, which is said to leave a faint herbal aroma that vendors using leaves still prize today.

Moin moin is a smooth, savory pudding steamed from a blended paste of peeled black-eyed peas, peppers, onions, and palm oil, often studded with boiled egg, fish, or corned beef. Vendors sell it sliced straight from tall steaming pots at breakfast stalls and bus stops.

Why it's made this way: It's made from the same bean paste as akara but steamed instead of fried, giving Yoruba cooks a more portable, shelf-stable version for all-day street selling.
