Unlike most Nigerian soups, banga gets its signature flavor from spice barks and roots like ataiko and beletete rather than the ground pepper blends used almost everywhere else.

Banga soup is made by boiling fresh palm fruit until soft, then pounding and sieving it into a rich orange cream that's simmered with dried fish, meat, and native spices. It's a signature soup of the Niger Delta, usually eaten with a firm cassava swallow or rice.

Why it's made this way: The soup is closely tied to the Urhobo, Isoko, Ijaw, and Itsekiri peoples of the oil-palm-rich Niger Delta, making it a defining regional flavor distinct from the tomato-based soups found further north.
