Kpokpo Garri (Crunchy Cassava Snack)

It's made from the exact same cassava root as ordinary garri, but fried into much larger, harder granules specifically so it stays crunchy instead of turning powdery.

Kpokpo garri is a crunchy, pellet-like variety of garri, fermented and roasted cassava granules fried into small hard nuggets rather than the fine, flaky garri used elsewhere in Nigeria. Vendors sell it in small bags, eaten dry or briefly soaked with sugar and groundnuts.

Why it's made this way: The Niger Delta's cassava-processing traditions produced this denser, chewier style as a portable snack, distinct from the soft garri used to make eba swallow in other regions.
