The name comes from 'finn', an old Norwegian word for the Sami; the dish is also called reinsdyrskav, 'shaved reindeer', because the meat is shaved from frozen blocks.

Thin-sliced reindeer meat is browned in butter and simmered briefly in cream, then served over mashed potatoes with lingonberries and pickles. It's sold at markets and tourist food stalls in Tromsø, Alta, and other northern towns.

Why it's made this way: Reindeer herding is central to Sami livelihood across the Arctic north, and quick-searing thin cuts of meat let herders cook efficiently with limited fuel.
