Locals in the Salten region insist the dish exists nowhere else in Norway, and returning visitors are routinely taken straight to a café for one.
A soft potato-and-wheat flatbread, lefse, is folded around møsbrøm — a sticky, sweet gravy made by melting brown cheese with milk and syrup. It's sold at cafés and bakeries around Bodø and the wider Salten district as a filling snack.
