Instead of a wheat bun, the classic Norwegian hot dog is wrapped in lompe, a soft potato flatbread closer to a savory pancake than bread.

A grilled or boiled sausage rolled inside one or two lompe with mustard, ketchup, and fried onions, sold from gatekjøkken street kitchens, kiosks, and grills at markets and gas stations across Norway.

Why it's made this way: Potato flatbread was already a staple of Norwegian home cooking, so wrapping a sausage in lompe rather than imported wheat bread made for a cheap, filling street snack using ingredients already on hand.
