Sodd

The soup's name traces back to the Old Norse word for 'to boil,' and it's mentioned as a feast dish in a 13th-century royal saga.

A light, ginger-spiced broth is simmered with mutton and small meatballs, then served with boiled potatoes and carrots on the side. It's festival and celebration food across Trøndelag, traditionally served at weddings and confirmations.

Why it's made this way: Sodd has been a mark of celebration in central Norway for centuries, and its regional recipe was granted protected designation of origin status in Norway in 2012 to preserve the local tradition.
