Vendors along the Interamerican Highway through Chiriquí grill these skewers over open charcoal right at the roadside, flagging down passing cars and buses.
Chunks of marinated beef are threaded onto wooden skewers and grilled over charcoal until charred outside and juicy inside. They're sold hot off the grill at roadside stands throughout Chiriquí's cattle country.
Why it's made this way: Chiriquí is Panama's leading cattle-ranching province, and these grilled beef skewers are the province's classic highway food, tied directly to its ranching economy.
