Bugaba's cooler highland climate lets dairy farmers produce cheese year-round without the rapid spoilage that limits production in Panama's hotter lowlands.

A fresh, slightly salty cow's milk cheese made in small highland dairies around Bugaba and Volcán. It's sold in blocks at roadside coolers and local markets, often eaten with bread or fried plantain.

Why it's made this way: Chiriquí's cool highland pastures near Volcán and Boquete make it Panama's dairy heartland, and this cheese is one of the clearest products of that geography.
