Saril (Sorrel Drink)

Saril is brewed from the dried calyces of a hibiscus variety, not the flower petals people usually picture.

Dried sorrel petals are steeped with ginger, cloves, and cinnamon, then sweetened into a deep-red, tart drink served ice-cold. Vendors sell it from coolers and glass jugs, especially in December.

Why it's made this way: Like Patí, saril was carried to Colón by West Indian migrant communities, and it remains one of the clearest culinary fingerprints of the province's Caribbean roots.
