Panama's classic version is chicha de arroz con piña — the pineapple peel boiled with the rice gives it a fruity tang, putting leftover rind to use.

Rice is boiled with pineapple peel, sugar and cinnamon, then blended, strained and often finished with a splash of milk into a creamy, lightly spiced drink. Herrera market vendors serve it in plastic cups over ice.

Why it's made this way: Rice farming is common across Herrera's flatlands, and this simple rice drink is a staple of the province's market stalls and roadside food stands.
