Guna cooks traditionally use the coconut itself as a measuring cup, a holdover from the era when coconuts served as Guna Yala's informal currency.

Fresh-caught fish or crab simmered in coconut milk with plantain and root vegetables, an everyday staple across the San Blas islands. It's served in gourds or bowls straight from family cooking fires near the shore.

Why it's made this way: Guna Yala's economy and cuisine have long revolved around its coconut palms, and this coconut-milk fish stew is the archipelago's most characteristic daily dish.
