In Tok Pisin, "kumu" is simply the word for any cooked leafy green — but ask for it in the Highlands and you'll almost always get aibika.

Aibika, a soft-leaved hibiscus green, is chopped and simmered with coconut milk and sometimes corn, forming the everyday cooked green served alongside kaukau at highlands markets and family meals.

Why it's made this way: As one of the most widely grown leafy greens across Papua New Guinea's gardens, aibika became the default answer to "kumu" in the highlands, rounding out kaukau-based meals with a cheap source of vegetables.
