Some of the same tuna-rich waters around New Britain feed one of the Pacific's largest canneries, yet at the market it's still sold the simplest way possible — straight off the grill.
Chunks of fresh tuna, threaded onto skewers and grilled over coals, are sold hot at Rabaul's waterfront market, often with nothing more than salt, lime, or a simple chilli dip.
Why it's made this way: New Britain's waters sit within one of the world's richest tuna fishing grounds, feeding both PNG's major tuna-canning industry and the simple grilled skewers sold within sight of the boats that caught them.
