Anthony Bourdain visited Cebu and declared he'd found the best pig he'd ever eaten — celebrity praise that turned an already-loved local specialty into a source of national pride.
A whole weaned pig is stuffed with a fragrant bundle of lemongrass, batuan fruit, and native spices, then slow-turned over charcoal for hours until the skin shatters into a deep-mahogany crackling. Street-side lechon stalls around Cebu carve it to order onto plates of rice, no sauce needed.
Why it's made this way: Cebu's version skips the tomato-and-liver sauce found elsewhere in the Philippines, relying instead on native herbs stuffed inside the pig — a pre-colonial approach to flavoring meat that predates the dish's Spanish name.
