It's built from two completely different chewy textures at once — tapioca pearls (sago) and cubed seaweed-based jelly (gulaman) — floating together in one glass.

Sago't gulaman mixes small tapioca pearls and cubes of gulaman jelly in a sweet brown-sugar syrup, topped up with cold water and ice. Vendors sell it from pushcarts and roadside coolers across the Philippines, often parked right next to fried street snacks.

Why it's made this way: It became one of the country's most iconic 'thirst-quencher' street drinks precisely because it's cheap, filling, and cools you down fast in tropical heat.
