Warsaw once had entire small bars whose menu was built around almost nothing but this one soup and a handful of dumplings next door.

Strips of beef tripe simmered for hours in a peppery beef broth with root vegetables and marjoram, served scalding hot with a side of bread — a staple of Warsaw's cheap, no-frills milk bars (bary mleczne).

Why it's made this way: It's an old thrift dish, built to make an inexpensive, unglamorous cut of meat into a warming, filling meal — exactly the kind of food the postwar milk-bar system was designed to serve fast and cheap.
