A well-known Warsaw bar chain was once built around exactly two menu items — these dumplings and tripe soup — and locals just called it by the food, not the sign.

Big, pillowy yeast-and-potato dumplings, usually stuffed with minced pork, steamed until fluffy and served with melted butter or crackling — a heavier, more filling cousin of the pierogi, sold from bar counters rather than restaurant plates.

Why it's made this way: Like flaki, they trace back to Warsaw's postwar milk-bar culture, when the goal was to fill a working person's stomach as cheaply and quickly as possible.
