Their name and shape both borrow from the zeppelin — Polish home cooks in other regions even call the same dish 'cepeliny' for exactly that resemblance.

Oversized, torpedo-shaped potato dumplings stuffed with seasoned minced meat, boiled and topped with fried bacon and onion — sold at Podlasie's roadside bars and market fairs, especially around Suwałki.

Why it's made this way: The recipe crossed the border with Lithuanian settlers and the Lipka Tatar communities who have lived in this corner of Poland for centuries, giving Podlaskie a noticeably different regional table from the rest of the country.
