'Kartacz' is Polish for a cannon's canister shot, a nod to the dumpling's heft — across the border in Lithuania the same dish is called cepelinai, after the zeppelin it resembles.

Oversized, torpedo-shaped potato dumplings stuffed with seasoned minced meat, boiled and topped with fried bacon and onion — sold at Podlasie's roadside bars and market fairs, especially around Suwałki.

Why it's made this way: The dish comes from Lithuanian cuisine and is rooted in the Suwałki and Sejny area, where Poland's Lithuanian minority lives, giving Podlaskie a noticeably different regional table from the rest of the country.
