It looks like a blood sausage but barely needs any meat at all — grated potato does almost all the work.
A sausage casing packed with grated raw potato, bacon, onion and marjoram, baked or grilled until the filling sets, then sliced and served hot at Podlasie's market stalls.
Why it's made this way: It's a frugal, farmhouse dish typical of this rural, agricultural corner of Poland, where potatoes were cheap and plentiful and stretched further than meat.
