It looks like a blood sausage but barely needs any meat at all — grated potato does almost all the work.
A sausage casing packed with grated raw potato, bacon, onion, and a little blood or offal for richness, baked or grilled until the filling sets, then sliced and served hot at Podlasie's market stalls.
Why it's made this way: It's a frugal, farmhouse dish typical of this rural, agricultural corner of Poland, where potatoes were cheap and plentiful and stretched further than meat.
