It's baked by pouring batter over a slowly turning wooden spit in layers, one thin coat at a time, so the finished cake comes off looking like a stack of tree rings.

A tall, ridged spit cake made by dribbling egg-rich batter over a rotating spindle in front of an open flame or oven, layer by layer, until it builds into a knobbly log shape — sold sliced at Podlasie fairs and markets.

Why it's made this way: The technique is shared with Lithuanian šakotis just across the border, another sign of how closely Podlaskie's food culture is tied to its Baltic and Lithuanian neighbors rather than the rest of Poland.
