Along the Baltic boardwalks, herring stalls will happily sell you the fish six different ways — in oil, in cream, pickled, or rolled — before 10am.
Marinated herring fillets in oil with onion, piled onto dark rye bread or served straight from a paper tray, sold from small coastal kiosks in Gdańsk, Sopot, and along the Pomeranian shore.
Why it's made this way: Herring has been the backbone of Baltic fishing economies for centuries, and pickling or oiling it was simply how coastal towns kept the catch edible before refrigeration — a habit that turned into a beloved snack.
