Every one of these dumplings is pressed with a thumbprint dimple in the middle — not for looks, but so it cooks evenly and holds gravy.

Dense, grey-white dumplings made from a mix of raw and cooked potato with potato starch, boiled and served with gravy or fried onions — sold by weight at Silesian bar mleczny counters and festival food stalls alongside roladas and red cabbage.

Why it's made this way: The recipe reflects Silesia's history as a heavily industrial, coal-mining region: cheap, starchy, calorie-dense food that could be made in bulk and eaten fast between shifts.
