Nicknamed 'Polish Champagne' for its pale color and intense carbonation, Grodziskie nearly went extinct — the last historic batch was brewed in 1993 before a 21st-century revival brought the style back.

Grodziskie is a hazy, straw-gold beer made entirely from oak-smoked wheat malt, giving it a distinctive campfire aroma alongside a light body, high fizz, and low alcohol. It's brewed in and named for the town of Grodzisk Wielkopolski, where the style has roots stretching back some 700 years.

Why it's made this way: Wielkopolska's Grodzisk Wielkopolski was once home to dozens of breweries producing this smoked-wheat style found nowhere else in Poland, a genuinely native regional beer rather than a generic lager.
